In today's world, consumers are becoming increasingly interested in organic consumption, because they have the desire of living a healthy life and eating healthy food with sound air, water and soil. This new and modern concept has oriented people towards organic philosophy. People understand that organic food is a fundamental part of good health. They look for the assurance of products that are labeled as "certified organic". Thus, people are ready to purchase quality organic food products that improve the lives of their families.

In organic production, there is no use of artificial and synthetic & chemical fertilizer or pesticides; so that we can protect and survive the unique ecological balance of the nature.

The movement towards healthy food and nature has started mainly in 1960s.IFOAM (International Federation of Organic Agriculture Movements); worldwide umbrella organization of the organic agriculture movement had classified the principle aims, the basic standards and guidelines of organic agriculture and processing.In order to specify the rules of organic production and marketing of the vegetal and livestock products which are maintained by organic methods; the official regulation is on force in Turkey since 14 December 1994. This regulation complies with the EC regulation no: 2092 / 91. Turkish Ministry of Agriculture and Rural Affairs is the only official authority for organic production.

These principles are found in ecology. It is a science, which is concerned with living organisms and environment.
The aim in organic farming is to support biological process. It can only be possible without using synthetic and chemical fertilizers, pesticides, herbicides and without modification of the genetic organism in nature.
The designation of "Organic Certified" starts by production from land that has not been exposed to synthetic pesticides, fungicides, herbicides or chemical fertilizers for at least the last three years. Certified organic producers, distributors and food manufacturers are subject to an annual third- party inspection and to set the certification standards, reinforced by an independent audit.

The basic principles of organic movement are given below:

"The strict environmental requirements should be met;
" The possible use of energy and irreplaceable raw materials should be minimized;
" There should be no use of artificial additives, colorings;
" There should be no use of hormones;
" Processing methods which ensure natural preservation and enhancement of quality should be used;
" Packaging which is recyclable and environmentally friendly should take place;
" There should be a holistic approach in the concept of organic movement. It means nature is perceived to be more than the separate individual elements into which it may be split;
" The sound relationships with nature and its cycles with human health should be survived.
